Chicken Masala Curry
Ingredients
1lb Chicken pieces
1 large Onion (chopped)
1 cup Tomato Purée or simply blend two large tomatoes and use
3tsp Ginger-Garlic Paste
1 tsp Tropical Heat Turmeric Powder
1 tsp or 1½ tsp (to desired heat level) Tropical Heat Chilli powder
2 tbsp Tropical Heat Chicken Masala powder
Salt to taste
Coriander leaves
2tbsp Oil
Method
Marinate chicken with turmeric powder and 1 tsp ginger garlic paste for approximately 15 minutes.
Heat 2 tsp oil in a pan and sauté the onions and the remaining ginger-garlic paste.
tomato purée and cook for 2-3 minutes.
Add chilli powder, chicken curry masala powder and stir fry.
Add chicken pieces and sauté for 1-2 minutes.
Add enough water (to desired consistency) and salt and cook for 10-15 minutes or pressure cook for 1 whistle.
Garnish with freshly chopped coriander leaves.
